Pandanus Muffin Delight
By the College of Micronesia Hotel Restaurant Management Students
8 Servings
1 cup white flour
½ cup whole wheat flour
2 teaspoon baking powder
½ teaspoon salt
½ teaspoon Pohnpeian cinnamon (freshly ground)
½ Pohnpeian nutmeg (from Botanical Garden tree)
½ cup fresh squeezed Pohnpeian pandanus juice
½ cup skim milk
½ cup butter
1 egg
½ cup raisins
Heat oven to 400 degrees. Lightly oil 8 muffin cups (medium size). Mix all ingredients in order listed just until flour is moist. Batter should be slightly lumpy. Fill muffin cups 2/3 full.
Bake 18 - 20 minutes.
