Pilolo in Mwehng
A recipe from Mwoakilloa
- Grate raw giant swamp taro.
- Add a little starch.
- Add coconut cream and mix well.
- Cook sugar until caramelized (or molasses), add water and pour into baking tin.
- Make oval-shaped balls about a cup in amount and place in baking tin.
- Bake in charcoal oven about an hour.
Note: There are variations on this recipe. Kehn Albert pointed out that he prepares a pilolo with grated giant swamp taro, pounded ripe banana, and the pulp extracted from boiled pandanus (mokwan).
