Utin Iap and Utin Pihsi Fruit Salad
10 raw Utin Iap
10 raw Utin Pihsi
3-5 raw Karertik (Kalamansi) citrus
1. Peel bananas and cut in round slices into bowl.
2. Squeeze the juice of the Karertik citrus in a glass or cup. Use a strainer to separate the seeds from the juice.
3. Pour the Karertik citrus juice over the cut banana slices.
4. Chill or serve directly.
Utin Iap Bread Slices
2 raw Utin Iap bananas
4 slices of whole wheat bread
slices or on other bread
1. Cut raw Utin Iap bananas lengthwise.
2. Serve on home-made whole wheat bread (or on other bread or crackers).
3. Serve as a snack for 1-2 people.
Utin Iap Ice Cream Delight
5 raw ripe Utin Iap bananas
3-5 raw Karertik (Kalamansi) citrus
¼ cup clean drinking water
½ to 1 cup ice cream
1. Peel banana and put in blender.
2. Squeeze citrus and strain juice from seeds.
3. Add citrus juice to blender.
4. Add ¼ cup clean drinking water to blender, or enough to allow banana to be mixed well and to the consistency preferred. Add more water for a thinner consistency.
5. Put ice cream in a serving bowl and spoon out some of the banana mixture on top.
6. Garnish with lighter colored bananas. Taiwang is good as it is sweet and mixes well with Utin Iap, which is less sweet.
Utin Iap Snowflake
4 Utin Iap bananas
½ to 1 cup milk
1. Boil 4 ripe Utin Iap bananas.
2. Cool and then peel.
3. Cut bananas and put in the blender.
4. Cover with milk. For those having diabetes or who are trying to avoid overweight problems, use low-fat milk.
5. Add enough milk to be able to blend the bananas; then blend until well-mixed and thick.
6. Makes 2 plates and serves 2 adults.
Utin Iap Taiwang Delight
5 raw ripe Utin Iap bananas
3-5 raw Karertik (Kalamansi) citrus
¼ cup clean drinking water
2 Taiwang bananas
1. Peel Utin Iap banana and put in blender.
2. Squeeze citrus and strain juice from seeds.
3. Add citrus juice to blender.
4. Add ¼ cup clean drinking water to blender, or enough to allow banana to be mixed well and to the consistency preferred. Add more water for a thinner consistency.
5. Pour into serving bowl.
6. Garnish with slices of Taiwang banana. 7. Chill and serve. Makes 2-4 servings.
Utin Iap Taiwang Fruit Salad
8 raw Utin Iap
8 raw Taiwang
3 raw Utin Menihle, or Utin Pihsi optional
10 raw Karertik (Kalamansi) citrus
1. Select banana varieties with lighter coloration than Utin Iap for a contrast of colors. Taiwang is a very sweet tasting banana and fits well with Utin Iap, which is less sweet.
2. Peel bananas and cut in round slices into bowl.
3. Squeeze the juice of the Karertik citrus in a glass or cup. Use a strainer to separate the seeds from the juice.
4. Pour the Karertik citrus juice over the cut banana slices.
5. Be sure to mix citrus juice well with all banana slices to prevent darkening. 6. Chill or serve directly.
Utin Iap Taiwang Star
5 Utin Iap bananas
4 Taiwang bananas
Juice of 1 karertik (calamansi) citrus
1. Boil or steam Utin Iap for 10 minutes unpeeled.
2. Let cool. Peel. Slice lengthwise, forming 10 pieces.
3. Place 5 pieces on each plate, center widest parts, and form "stars."
4. Cut the raw Taiwang crosswise, forming round slices.
5. Place the Taiwang slices in rows, overlapping and filling up empty places on the place. Place one Taiwang slice in the center of the Utin Iap "star."
6. Squeeze juice from karertik through a strainer.
7. Spoon juice over the bananas. This provides flavor and additional vitamin C and helps to maintain color. 8. Makes two plates and serves two persons.
